Matcha is made from tea leaves that are grown avoiding direct sunlight.
The shade growing process causes an increase in chlorophyll levels which turns the leaves into a darker shade of green. Amino acid content is also increased this way, giving Matcha its umami flavour profile.
At Fukujuen, the finest tea buds are hand-picked by skilled tea-leaf picker. After the tea leaves have been steamed, the veins and stems are removed keeping the meat of the leaves, which is then dried.
Using traditional tea mortar, tea leaves are grinded carefully by hand like in the olden days.
